CARROTS: 45-60 daysplant 3” apart, seeds are tiny so don’t worry you will have to thin them no matter what. Companions: peas, lettuce (greens), onions, sage, tomatoes, rosemary, basil and parsley
CELERY: 75 days from starts, plant 2’apart as starts. Companions: tomatoes, beans, and the whole cabbage family.
CUCUMBERS: 60-75 days, plant 3 -5 plants per hill, they are a vine so I horizon trellis them to keep off the ground and to make picking easier. I usually grow separate in a 2’ x 5’ space.
GREENS 30-45 days ( lettuce, mesclun, salad stuff) I plant almost as a cover crop, broadcasting seeds in any open spot and under tall plants like like Kale because greens don’t like heat or too much summer sun. Greens also will companion with everything!
KALE: 45 days from starts/ 65 from seed plant 2’ apart. This is a HIGH yielding plant that does exceptionally well in Vermont! Harvesting starts mid June and can be cut at least twice a week.Four Kale plants can feed a family of 5 easy once or twice a week. With freeze cloth rated to 26 degrees,I had kale in the sample beds till Thanksgiving. Companions: salad greens, spicy mesclun, herbs
ONION: 70 days, space 3-4” apart. Plant early and often if youlike green onions like we do. Use sets and the big ones aren’t always better. Companions: swiss chard, beets, tomatoes, and lettuce
PEAS: 55-60 days, space 6” seeds apart and grow on a fence trellis for support. Companions: Squash, peppers, basil and most root crops.
PEPPERS: 70+ days from starts, space 18” apart as started plants. Pinch bloosoms until mid summer to get robust plants for bigger harvests. Companions: basil, cukes, oregano and parsley
